Tradition has it that the production of Modena Balsamic Vinegar is made in small wooden barrels, each one used for a specific process: acidification, maturation ang aging.
It aged in oak, chestnut, cherry, ash, mulberry, locust, juniper, each of which yields during aging aromas and flavours that make the Balsamic Vinegar of the House Bertoni unique and inimitable.
